  • Peanut Butter Chocolate Cheesecake Pie

    These delicious cheesecake pie can be done in 20 minutes, plus the cooling time of 1 hour. Great to prepare if you are having last minute visitors at home or if you wil attend a dinner party with your friends somewhere else. 

    Ingredients
    1 9-inch (6 oz.) prepared chocolate crumb crust
    1/4 cup plus 2 tablespoons unsalted peanuts, chopped, divided
    2 tablespoons caramel topping, divided
    1 2/3 cups (11-oz. pkg.) NESTLÉ Toll House Peanut Butter & Milk Chocolate Morsels
    1/4 cup milk
    1 pkg. (8 oz.) cream cheese, softened
    1/4 cup powdered sugar
    1 1/2 cups frozen whipped topping, thawed

    Preparation
    1. Spr/inkle 1/4 cup peanuts onto bottom of pie crust. Drizzle with 1 tablespoon caramel topping.

    2. Combine morsels and milk in medium, uncovered microwave-safe bowl. Microwave on MEDIUM-HIGH (70%) power for 45 seconds; STIR. The morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring until smooth.

    3. Beat cream cheese and sugar in large mixer bowl until creamy. Beat in chocolate mixture. Add whipped topping and stir vigorously until smooth. Spoon into prepared pie crust and swirl top. Sprinkle with remaining peanuts and drizzle with remaining caramel topping. Cover; refrigerate for at least 1 hour.

    Fresh Coconut Pie  

     

     

     

     

     

    Ingredients
    CRUST
    2 cup all purpose flour
    1 teaspoon salt
    1/2 cup corn oil
    1 tablespoon water 

    FILLING
    3 1 /3 cup buko, young coconut
    1/2 cup white sugar
    1/2 cup evaporated milk
    1/4 cup cornstarch
    1/4 cup cheese, grated

    Preparation
    1. To prepare the crust, combine flour and salt. Blend in oil thoroughly using a fork. Sprinkle with water. Continue "cutting" with a fork until flour mixture forms tiny lumps. Form flour mixture into a ball. Then divide dough into 2 equal portions. Roll out to make 2 crusts. Cover bottom of pie pan with one crust. Cut excess.

    2. Prick pastry all over with fork. Bake in preheated oven at 450°F for 12-15 minutes or until golden brown
     
    3. For the filling, combine all ingredients except cheese and cook over low heat. Continue stirring until thick. Pour mixture into pastry-lined pie pan.

    4. Top filling with the second crust. Seal ends all around with a fork.

    5. Bake at 400 °F until crust turns golden brown. Sprinkle grated cheese on top. Bake for additional 5 minutes.

    Chocolate-Macadamia Tart

    The maple syrup in this tart lightens the chocolate flavor and creates an ethereal custard to hold buttery macadamias.

    Ingredients
    1 cup heavy cream
    1/2 cup chopped bittersweet chocolate (3 ounces)
    3 large eggs
    1/2 cup pure maple syrup
    1/4 cup sugar
    1/2 teaspoon kosher salt
    2 cups macadamia nuts (10 ounces)

    Preparation
    1. Preheat the oven to 325°. Butter a 9-inch pie plate. In a heatproof bowl, microwave the cream and chocolate for 25 seconds until melted. Whisk until smooth. Let cool to warm. Whisk in the eggs, maple, sugar and salt.

    2. Pour the mixture into the pie plate. Insert the macadamias in an even layer. Bake the tart for 40 minutes, until the custard is just set. Let cool. Cut into wedges and serve.

     Serving: 8 - 12 slices
